In the last section  of &quot;The Omnivore&#039;s Dilemma&quot; (page 399-400 in the paperback) Michael Pollen writes about creating his own &quot;wild yeast&quot; by putting a mix of flour and water on the windowsill for a little bit and then sealing it up. He continued to feed it water and flour and made sure it smelled yeasty as it grew and didn&#039;t look too scary. Like the yeast version of Seymour the plant.</description>
