		<description>That's cool! In the last section  of "The Omnivore's Dilemma" (page 399-400 in the paperback) Michael Pollen writes about creating his own "wild yeast" by putting a mix of flour and water on the windowsill for a little bit and then sealing it up. He continued to feed it water and flour and made sure it smelled yeasty as it grew and didn't look too scary. Like the yeast version of Seymour the plant.</description>

		<description>By the way... for those reading this and wondering how a spring crop of garlic worked out, well, it didn't. The garlic cloves didn't get very big before the tops died off. Plant in the fall for a July harvest is what I've learned.</description>

		<description>It's not really a problem to let your mead run dry. Let it run dry, crash &#38; stabilize it with Campden tablets, and then back-sweeten to taste. It does require a little more bulk-aging though when it runs clear down to a specific gravity under 1.100 though.

I'd recommend visiting GotMead.com if anyone is curious about the modern methods of making excellent meads. Even better would be to borrow or buy Ken Schramm's Compleat Meadmaker.</description>
